Carla Marie Condo Cooking: Veggie Kare-Kare

Welcome back to the Condo Cooking Series, your one-pot-spot for healthy, affordable, delicious, easy-to-make recipes using single cooking appliances. Perfect for people who live in a condo or tiny apartment with no major kitchen setup.

For this recipe I’m using the Instant Pot, which is God’s gift to non-cooks everywhere. I’ve been using my rice cooker for ages to make basic dishes but now the Instant Pot allows me to whip up healthy, delicious meals in one go.

I’ve been inspired by my fellow White Bricker Alexa who’s been making awesome plant-based meals that are super affordable and hella delicious. So here’s my version of a super-easy Veggie Kare-Kare.


  • 1/4 k Squash

  • 1/4 k String Beans

  • 2 pcs. Eggplant

  • 1 Ampalaya

  • 5 Chilis (Sili Spada)

  • 1 Pack McCormick Kare-Kare Mix

  • Salt and Pepper

  • 1 Tbsp Bagoong

  • 5 Cups Water


  1. Plug your Instant Pot

  2. Set it to Saute for 22 Mins

  3. Add 5 Cups Water

  4. When it starts boiling add Kare-Kare Mix

  5. Stir everything together

  6. Dump in all the vegetables

  7. Add salt and pepper

  8. Simmer until the sauce thickens

  9. Add bagoong

  10. Serve with rice!

IMPORTANT: Always be very careful with the Instant Pot and follow instructions on how to use it before attempting to cook anything.
